Light straw-yellow hue; intense honeysuckle aromas, fresh and clean and bright, with undertones of mandarin and florals/blossoms in profusion. There is plenty of sweetness beautifully balanced with the fruit and acidity, resulting in a late-picked 'auslese' style that is uncannily like the German wines it seeks to emulate. Huon Hooke

The cane cut riesling is an excellent complement to various food dishes, including foie gras, blue cheese, and desserts, without being overpowering. It pairs perfectly with desserts such as pineapple tart tatin and strudel, as well as stronger blue vein cheeses like roquefort. 375ml bottle

Tasting Notes

'A huge nose of intense lime, apricot and honey. The palate is rich and unctuous, with fabulous concentration but never heavy. It builds and finishes with a crescendo of cumquat and preserved lime notes. Tangy acidity is cleverly concealed and keeps everything in check and lively.'

Winemakers Notes

The vines selected for the dessert riesling are cane-cut where the grapes are then left to shrivel on the vine, concentrating the sugar within the berries, before being harvested later in the season.

After selective hand-picking, the fruit is gently bag pressed and cold settled for 48 hours. Post racking, the juice is inoculated with a neutral yeast and fermented at cool temperatures for around three weeks. After the ferment has been stopped at the required sugar level, the wine spends around 6-8 weeks on lees before being prepared for bottling.
